Here in Yellowknife we had quite the drama involving a banana bread recipe, the facebook rants and raves page, and just general tongue in cheek fun. It was awhile ago but still hilarious. If you know, you know.
This is a version of the banana bread that I had in the Monorail Cafe many decades ago. Here I have made a vegan version of it and added chocolate chips instead of walnuts. Here it is shared, without drama but with plenty of yum to be had.
- 1 stick (or 1/2 cup) of butter substitute (I use Becel)
- 1 cup sugar (I used monkfruit)
- 1 egg substitute prepared (I use Bob’s red mill)
- 1 tsp water
- 1 cup banana, mashed
- 1/4 tsp vanilla extract
- 1 1/2 cup flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/4 cup dark chocolate chunks (there are so many vegan options here or just cut up a dark chocolate bar for chunks)
- Preheat oven to 350F
- Combine flour, salt, and baking soda in a bowl.
- In a measuring cup, melt the “butter” in the microwave.
- Add the sugar to the butter and mix well.
- Add the egg substitute, bananas and vanilla to the melted “butter”/sugar and mix well again.
- Add the wet mixture to the dry in the bowl. Fold together until just mixed and all flour is incorporated.
- Grease a loaf pan, I used a silicone one for easier loaf retrieval. Pour the mix into the pan.
- Bake for 1- 1 1/2 hour or until center of the loaf in firm and toothpick comes out clean.
For this one I didn’t do a calorie/macro calculation. I might come back and do one later but since I only make this during those fun times when calories don’t count (you know what I mean)…I think we might be better off knowing it’s vaguely healthy and made with love.
