I decided to get crazy and make some bean soup for lunch. Never really made a successful bean soup, somehow going in without a plan totally worked this time. I had my doubts, it seemed too simple. Then I tasted it, epic win!!! So filling too! A great lunch all on its own or a super filling one if paired with some bread. Fantastic on a rainy day like today. The thing I think I love most about this soup is that it reminds me of this delicious black bean soup I had once in the Bahamas. Oh happy soup.
- 1 can mixed beans (19oz), drained slightly, keep some of the juice
- 3 cup reduced salt chicken broth
- 2 carrots, sliced
- 1 celery stalk, sliced
- 1 tsp Mrs. Dash original
- 1 tbl panago italian seasoning (or any italian seasoning that contains garlic, red pepper, onion, and various herbs)
- Combine ingredients in a pot and allow to simmer for 1 hour.
Serves 4 (about 1 cup servings). Each serving contains 129 calories, .6 grams of fat, and 8.9 grams of fibre. This soup is a fibre powerhouse! No wonder it keeps me feeling full for so long. With the calories and fat being so low this is just such a winning tasty soup. I’m one of those picky eaters that hates eating the same thing for two days straight but I’ve certainly made an exception for this one!
